Creamy Tzatziki
Creamy Tzatziki
Ohhhh how great is tzatziki? I could lather this on ANYTHING!  Makes at least 3 cupsIngredients:1kg Natural Greek yoghurt2 Lebanese cucumbers1/2 Tsp olive oil2-3 garlic clovesSalt & pepper (to taste!)Directions: Firstly, you’ll need a bowl, a sieve and a choux cloth. Place the sieve on top of the bowl and line it with a choux cloth. Spoon the Greek yoghurt into the sieve and let it sit overnight (or for 1-2 hours) in the fridge to draw out any excess water. This helps the consistency become creamy! Grate the cucumber into another choux cloth and squeeze out any excess water. Add the strained yoghurt into a large mixing bowl with the cucumber,  olive oil, crushed garlic, salt and pepper. Mix well. Taste and season accordingly (might need more salt, depending on your liking!

Caramel Nut Butter
Caramel Nut Butter
I have recently made the switch from store-bought to homemade nut butter.. and I am in LOVE!! It's such a different taste, and makes you feel SO great because you made it yourself from scratch! #masterchefsWhen you see it blending in your food processor and think "there is no way that is turning to a creamy form..." just you wait.. because some magical shit is about to happen before your eyes 😂😂   Caramel Nut Butter Ingredients: 500g almonds1/4 tsp cinnamon1/4 tsp salt1/4 cup pitted dates2 tbsp coconut oil  Directions:  Pre-heat oven to 180 degrees celsius.  Place almonds onto a lined baking tray and roast in the oven for 20 minutes. This will bring out the natural oils of the almond and make it easier to blend.  Allow almonds to completely cool before proceeding to the next step.  Into a string food processor, add almonds, coconut oil, dates, salt and cinnamon and begin to blend. Scraping down the sides occasionally to ensure its all mixing! Blend until a smooth paste. Depending on your food processor, this could take around 20 minutes. I tested this recipe with a normal food processor and it took me 20 minutes of blending time and also with my thermomix and that took 10 minutes.  Once it's all done, store in an airtight container and eat (ie. spoon it onto EVERYTHING)

Greek Style Roast Capsicum & Garlic
Greek Style Roast Capsicum & Garlic
This Greek Style Roast Capsicum & Garlic is super easy and delicious as a snack or side. It'll stay fresh in the fridge for 4-6 weeks. Super quick and won't take more than 10 minutes to prepare. Serves: 10 Ingredients:  4 large red capsicums1/2 tsp salt 3 garlic cloves, sliced thinly1/2 cup rice bran oil (or more, if needed)1/2 cup extra virgin olive oil  (or more, if needed)Directions:  Preheat grill to 200 degrees (or a high setting)  De-seed capsicums and remove the remaining membrane.  Half capsicums, and place on a lined baking tray skin side up Splash a small amount of olive oil over the top and place under the grill for 10 minutes, or until the skins have begun to blacken.  Remove from grill and place capsicums into a plastic bag and tie a knot in the top of the bag, ensuring no air can escape. This will help steam the capsicums and assist in removing the skin. Leave to steam for 15 minutes.  Take capsicums out of plastic bag and remove the skin by pealing from edge to edge.  Place capsicums into a container and fill with olive oil and rice bran oil. Depending on the size of your container, you may need more or a little less.  Add salt and garlic into the container and give it a stir.  Place in the fridge and eat whenever!
