How good is hollandaise! For me, I have it every now and again, but I LOVE making my own so I can spice up the flavours!
Makes 1.5 cups of hollindaise
Ingredients:
250g butter, melted
1 tbsp lemon juice
1 tsp paprika, smoked
1 tbsp thickened cream
Salt and Pepper, to taste
1 tbsp. fresh chives, finely sliced
3 egg yolks
Directions:
- Using an electric beater or a metal whisk, beat the egg yolks until light.
- Add a table spoon at a time of the melted butter into the egg yolk, and continue to beat until it thickens.
- Add paprika, chives, cream, salt, pepper and lemon juice to the bowl and continue to beat until a thick consistency.
- Serve with an English muffin, poached egg and some delicious crispy bacon!
