How to Make Simple Hollandaise Sauce

 

How good is hollandaise! For me, I have it every now and again, but I LOVE making my own so I can spice up the flavours! 

Makes 1.5 cups of hollindaise 
Ingredients: 

250g butter, melted 
1 tbsp lemon juice 
1 tsp paprika, smoked 
1 tbsp thickened cream
Salt and Pepper, to taste 
1 tbsp. fresh chives, finely sliced 
3 egg yolks

Directions:

  1. Using an electric beater or a metal whisk, beat the egg yolks until light.
  2. Add a table spoon at a time of the melted butter into the egg yolk, and continue to beat until it thickens. 
  3. Add paprika, chives, cream, salt, pepper and lemon juice to the bowl and continue to beat until a thick consistency. 
  4. Serve with an English muffin, poached egg and some delicious crispy bacon!
