Banana Raspberry Muffins

Hey guys!These are perfect for an on-the-go snack because they're packed full of the good stuff! 

These muffins are also gluten free and refined sugar free! Which is awesome for those people who struggle finding delicious snacks with no gluten! 

1 cup almond meal
1/4 cup coconut flour (can swap for protein powder!) 
2 eggs, whisked
Sprinkle of cinnamon
3 over ripe bananas, mashed
1/4 cup organic honey
100g fresh raspberries.

Pre Heat oven to 180 Degrees Celsius.
Mix everything into a bowl except the raspberries. 
Once mixed well, fold in the berries and spoon the mixture into muffin tins. 
Bake for 30 minutes or until lightly browned.

    Love the recipe!! I used protein powder for mine (I didn’t have coconut flour) and they didn’t rise. They still taste great but I was just wondering if they didn’t rise because I used protein and not coconut flour?

  • Hi Leah these look great and I’m loving the fact that they’re gluten free and great for people like me on Keto. However what could I use instead of mashed bananas.

  • Great recipe!!! I made them as mini muffins using oats instead of almond meal and coconut flour. They are a great little snack for the kids lunch box :)

    I haven’t tried Oat meal – but I’m totally sure you can! It’s similar consistency, so give it a go! :)
