Avocado on toast with Tomato and Corn Salsa

Needing a fresh breakfast? Here you go! This is perfect for a delicious and healthy breakfast with loaded with veg! The coriander and lemon go so well together, you'll absolutely love this recipe. 


Serves 3
Ingredients: 
2 medium tomatoes, diced 
1/2 cup canned corn kernels, drained and rinsed 
1/2 medium red onion, finely diced 

1 tbsp fresh coriander, roughly chopped 
1 avocado, sliced 
1/2 tbsp olive oil 
1 tbsp. lemon juice 
Pinch of salt 
1 tbsp fresh chives, finely sliced 
3 -4 pieces of sourdough toast, toasted 

Directions: 

  1. In a large mixing bowl, add tomatoes, corn, spring onion, fresh coriander, olive oil, lemon juice, chives and a pinch of salt. mix well. 
  2. In another bowl, mash avocado using a fork, keeping it chunky! Season with a pinch of salt and pepper. 
  3. Layer avocado on toast and top with salsa. Add an extra squeeze of lemon! 
  4. EAT!
