Under $20 Meals - Vegetable Laksa
This recipe is part of my under $20 meals to feed you or your family! The best thing about this one is you can bulk it with whichever proteins you like, and freeze the broth to make it again for even cheaper without buying more laksa paste.

In a pot, add a drizzle of oil and heat over medium heat.
Add the laksa paste and cook for 1 minute or until fragrant.
Add the coconut milk, fish sauce, soy sauce and vegetable stock and bring to a light simmer.
Add the broccoli, carrot and mushrooms and cook until lightly softened. Taste and add lime if you want a little zing. Add the tofu.
Cook the noodles according to packet instructions.
Divide the noodles between bowls and pour over the laksa broth. Top with chilli oil if you have it.
Leah's notes
Total: approx. $22.90, but the fish sauce, soy sauce and laksa paste become staples for next time.
Note: The costings were done off the Woolworths website with a rough estimation done on usage. The brands chosen were mostly home brand or Woolworths branded (no problem with that!), just to note for when shopping. These costs can change depending on where you shop and what you are comfortable with in your own household budget, so use this as a base to build off.
