Ingredients:
4 small tortillas, warmed
1 packet of Vegie Delights Savoury Mince
1 garlic clove, crushed
½ brown onion, diced
½ chilli, diced
Olive oil, for cooking
2 tablespoons taco spice
Salsa:
1Ā avocado, dicedĀ
1 red tomatoes, dicedĀ
1 small cucumber, dicedĀ
½ red onion, dicedĀ
1 lemon, juicedĀ
10 fresh chive leaves, finely slicedĀ
1 tbsp olive oilĀ
Salt and pepper to taste
Extras:
Lime juice
Fresh coriander
Directions:
- In a medium mixing bowl, mix together avocado, cucumber, tomato, chives, red onion,Ā olive oil, lemon, salt and pepper. Mix well. Set aside.
- In a small pan, heat olive oil over a medium high heat. Add garlic, onion, chilli and cookĀ for 3-4 minutes until onion has softened. Add Vegie Delights Savoury Mince and heatĀ through, breaking it into smaller pieces.
- Add taco spice mix and a touch of water to thin it out a little, and mix well, coating theĀ mince.
- Warm tortillas and place mince inside, topping with the salsa. Serve with a squeezeĀ of lime and coriander.
