Banana and Oat muffins

AHHH these are like my banana bread (the biggest winner) but muffins...and a whole lot of oats! They're super moist and delicious, perfect for a grab and go snack.

Recipe:

1 Cup Almond Meal
3 Very Ripe Bananas, Mashed
3/4 cup Rolled oats
1⁄4 Cup Raw Honey
1-Cup Fresh blueberries (or any berry!)
3 Eggs
1 tsp baking powder
Pinch Of Cinnamon
+ 1 extra banana to top with!

Directions:

  1. Pre-heat oven to 180 degrees celsius.
  2. Place all ingredients in a bowl together except the berries!
  3. Use a spoon to combine all ingredients together.
  4. Once the mixture is thick in consistency, fold the berries in with a spoon.
  5. Pour into a pre lined muffin tin. Top with a few sliced of banana.
  6. Bake in the oven for 25-30 minutes, or until brown.

Using a skewer, poke it deep into the cake; if it comes out clean, it’s ready!

  • My 16 month old boys LOVE these! They freeze well, so easy to make and pull out in the morning ready for an arvo snack! Thank you!

  • Is there an alternative to the almond meal? What other flour can I use? Coconut flour perhaps?

  • Lovely recipe – they look delishhhhh! I’m calorie counting at the moment and would be great to know how much you think it would be in calories? Do you happen to know? x
