Almond Meal Pikelets – LEAH ITSINES

Here's another FREE BARE Guide recipe! These amazing Almond Meal Pikelets are a perfect Model 2 snack:) They're also perfect for all my pancake lovers out there.. I honestly can't get enough of this recipe. This is one the kids will love too, I hope you enjoy it!

Serves: 1
Prep time: 10 minutes
Cook time: 15 minutes

Ingredients:

1/4 cup almond meal
1/4 tsp baking soda
1 tsp ground cinnamon
1/4 tsp sea salt
1 tsp vanilla extract
1 egg
1/2 cup canned diced apple

Directions:

  1. In a small bowl, add almond meal, baking powder, cinnamon, salt, vanilla extract, egg and 1/4 of the diced apple. Mix well.
  2. In a small non-stick frying pan, pour a small amount of olive oil and heat over a medium to high heat. Spoon a heaped tablespoon of the mixture into the pan and cook for 2 minutes or until you see bubbles begin to form on the uncooked side. Flip and cook for a further minute.
  3. Repeat with the remaining mixture.
  4. Stack the pikelets and top with the remaining diced apple.
