Kids' Pasta Soup Freezer Cubes
My mum guilt meal prep! Whenever I go away, a new batch of pasta soup cubes is an absolute must. You cook and blend a big batch of veggies, freeze them in single serve silicone muffin trays, and then each one becomes a quick pasta soup for the kids.

Cook all the veggies in a pot with olive oil until they lightly soften.
Add the veggies to a blender with a splash of stock or water (just to help it blend) and blend until smooth.
Spoon into single serve silicone muffin trays and freeze. Each muffin is one serve.
To make the soup, add one frozen portion to a pot with 1 cup of stock or bone broth and the pasta. Cook until the pasta is done. Add more or less liquid depending on how soupy they like it.
Stir through the parmesan and serve.
Leah's notes
Other additions I've used: chopped baby spinach (added last minute) and broccoli stems.
