Protein Peanut Butter Blondie

Every single night, Mitch rummages through the fridge and pantry for protein snacks, so I meal prepped him this delicious blondie. Everything goes in one bowl! He pairs it with a Pauls PLUS+ Protein yoghurt pot and it's the perfect mix.

Protein Peanut Butter Blondie

ingredients

  • ½ cup plain flour
  • ¼ cup instant oats
  • ½ cup brown sugar
  • 1 scoop (30g) vanilla protein powder
  • ¾-1 cup almond milk
  • 1 tbsp shredded coconut
  • ½ tsp baking powder
  • ½ cup runny peanut butter
  • 1 tsp vanilla essence
  • ¼ cup choc chips (optional)
  • Sprinkles, to top (optional)

method

  1. Preheat the oven to 180°C and line a 20cm baking dish.
  2. Add everything into one bowl and whisk to combine. If it needs more milk, add a little at a time.
  3. Pour into the dish and add some sprinkles on top if you want a little extra fun.
  4. Bake for 20-25 minutes or until cooked through.
  5. Allow to cool, then slice. Store in the fridge.

Leah's notes

I used Yes Please Vanilla Protein Powder.

Enjoy with a Pauls PLUS+ Protein yoghurt for an extra protein hit.
