Budget Chicken Drumstick Tray Bake

BUDGET FRIENDLY DINNER TONIGHT? I got you! Chicken drumsticks are a great affordable protein (2kg was $8!) and it's DELISH. Mitch calls this meal "drummies", so anytime he says he wants that, I know exactly what he means.

Budget Chicken Drumstick Tray Bake

ingredients

  • 2kg chicken drumsticks
  • 3 potatoes, cut into wedges
  • 3-4 carrots, roughly chopped
  • 1 large onion, quartered
  • 1 zucchini, chopped
  • 1 lemon, halved and juiced
  • 5 garlic cloves, crushed
  • Salt, pepper, dried oregano and paprika (be Leah generous!)
  • Olive oil (lots, we need it!)
  • Pita bread and tzatziki, to serve (optional)

method

  1. Preheat the oven to 180°C.
  2. To a lined baking tray, add the drumsticks, potatoes, zucchini, onion and carrots. Season with salt, pepper, oregano, paprika and garlic and add a big drizzle of olive oil.
  3. Squeeze the lemon over the top and leave the lemon halves in the tray for extra flavour.
  4. Bake for 1 hour, or until browned and cooked through. Give the tray a big mix halfway.
  5. Serve with toasted pita and tzatziki, or bulk it up with a salad.

Leah's notes

Leftovers? Strip the chicken, chop the veg small and make my Mascarpone Chicken Pie. Repurposing meals to save $$ is a huge win!
