Did you know... if you blitz 7 vegetables and cook them with beef mince, you get a hidden veggie bolognese perfectly portioned for the kids? Gigi smashes this at least 3 times a week and it makes me feel great!

7 Vegetable Kids' Bolognese

ingredients

  • 2 carrots
  • 3 celery stalks
  • 5 mushrooms
  • 1 red capsicum
  • 1 eggplant
  • 1 onion
  • Lots of garlic
  • 1kg beef mince
  • 2 x 400g cans chopped tomatoes

  • Olive oil, for cooking

method

  1. Blitz the carrots, celery, mushrooms, capsicum, eggplant, onion and garlic in a food processor until very fine.
  2. Heat a splash of olive oil in a large pot and brown the beef mince, breaking it up into small pieces.
  3. Add the blitzed vegetables and cook for a few minutes.
  4. Add the chopped tomatoes to cover, season with salt, pepper, oregano and cinnamon, and simmer for 1 hour.
  5. Allow to cool, then freeze in single serve silicone muffin trays.

Leah's notes

To serve, add a portion to a pot with a little stock and cook the pasta right in the sauce.
