Zucchini and Ham Freezer Slice

Meal prep that isn't a chore! This is what I froze for postpartum, because I needed extra nutrients AND one handed snacks. It's packed with zucchini, pumpkin and capsicum, and everything gets mixed in one bowl.

Zucchini and Ham Freezer Slice

ingredients

  • 6 eggs
  • ¼ cup milk
  • 1 cup self raising flour
  • 1 small brown onion, finely diced
  • 3 large zucchinis, finely grated and excess water squeezed out
  • 1 cup grated pumpkin
  • 200g ham, sliced
  • 1 cup grated cheese
  • Small handful basil
  • 1 capsicum, finely diced
  • 2-4 garlic cloves, crushed
  • Salt and pepper

method

  1. Preheat the oven to 180°C and oil a baking tray.
  2. Mix everything together in a large bowl.
  3. Pour into the tray and bake for 35 minutes, or until golden brown on top.
  4. Allow to cool, then slice into squares.

Leah's notes

Freeze the squares individually so you can grab one at a time.

I bake mine in my Wiltshire enamel baking tray.
