Under $20 Meals - Vegetable Pasties

This recipe is part of my under $20 meals to feed you or your family! Mum would make these for us ALL the time as kids and they were always in the freezer. A great thing to make in bulk and keep for a rainy day.

Under $20 Meals - Vegetable Pasties

ingredients

  • 2 medium carrots, diced
  • ½ large swede, diced
  • 1 brown onion, diced
  • 1 small sweet potato, diced
  • 2 large white potatoes, diced
  • ½ cup frozen peas
  • 1 tbsp curry powder
  • 1 tsp salt
  • 1 tsp pepper
  • Olive oil, for cooking
  • 4 puff pastry sheets
  • 1 egg, whisked
  • 1 tbsp paprika

method

  1. Preheat the oven to 180°C.
  2. In a large pan, heat olive oil over medium heat. Add the carrot, swede, onion, sweet potato and potato and cook for 15 minutes until lightly softened. Add the peas and cook until defrosted.
  3. Add the curry powder, salt and pepper and stir well.
  4. Place a small bowl upside down on the puff pastry and cut around it to make circles.
  5. Add a couple of spoonfuls of filling to the middle of each circle, then fold one side over to enclose. Press around the edges with a fork to seal.
  6. Brush with egg wash and sprinkle with paprika for colour.
  7. Bake for 30 minutes, or until lightly golden. Serve with sauce!

Leah's notes

To freeze, freeze them uncooked and bake from frozen, adding 5 minutes to the cook time.

Note: The costings were done off the Woolworths website with a rough estimation done on usage. The brands chosen were mostly home brand or Woolworths branded (no problem with that!), just to note for when shopping. These costs can change depending on what you are comfortable with in your own household budget, so use this as a base to build off.
