Under $20 Meals - Spanakorizo with Chickpeas

ingredients

  • 1 brown onion, diced
  • 3 garlic cloves, crushed
  • 2 tbsp tomato paste
  • 3 cups vegetable stock
  • ½ cup long grain rice
  • 1 bunch English spinach, chopped
  • 1 can chickpeas, drained and rinsed
  • Salt, pepper and chilli flakes
  • Olive oil, for cooking

method

  1. Heat a drizzle of olive oil in a deep pan over medium heat. Add the onion and garlic and cook for 2-3 minutes until soft.
  2. Add the tomato paste and cook for 1 minute.
  3. Add the rice and stir to coat, then add the stock. Bring to a simmer, cover and cook for 15 minutes.
  4. Stir through the spinach and chickpeas and cook for another 5 minutes, until the rice is tender and the spinach has wilted.
  5. Season with salt, pepper and chilli flakes and serve.

Leah's notes

Total: approx. $9.39 for two serves.

Note: The costings were done off the Woolworths website with a rough estimation done on usage. The brands chosen were mostly home brand or Woolworths branded (no problem with that!), just to note for when shopping. These costs can change depending on what you are comfortable with in your own household budget, so use this as a base to build off.

Love, Leah x
