Serves: 4 (8 slices)

600g lean beef mince 
1 red onion, finely diced 
1 large garlic clove, crushed 
1/4 cup parsley, chopped roughly 
1 tsp fresh thyme leaves, chopped 
1 tbsp Worcestershire sauce 
1/2 tsp mustard powder 
1/2 tsp cayenne pepper 
1/2 cup breadcrumbs 
1 medium tomato, grated 
2 eggs
Salt and pepper 

1/2 cup passata sauce 
1 tsp apple cider vinegar 
1 small garlic clove, crushed 
1 tbsp vegetable stock (or water)


  1. Pre-heat oven to 180 degrees celsius.
  2. Add all ingredients under"Meatloaf" into a large mixing bowl and mix well. Place into an oiled bread tin (I used 24cm x 13cm x 6.5cm) and spread edge to edge. 
  3. In a small bowl, add all ingredients under "sauce" into a bowl and mix well. Pour over the meatloaf. 
  4. Place into the oven for 40 minutes, after the 40 minutes place under the grill for 5 minutes to get some colour on top. 
  5. Slice and serve hot!
