This recipe is straight from yiayia! Her marinated olives are to die for so i just HAD to share the recipe - and its surprisingly easy!
1 garlic clove, slivered
1 tsp thyme leaves
1/4 tsp lemon zest
1/2 tsp chilli, diced
1 tsp olive oil
1/2 tsp fennel seeds
Pinch of salt
500g Olives (kalamata is great, but whatever you like!)
- Add olive oil, thyme, lemon zest, chilli, fennel seeds and salt into a pan and cook on a medium heat for 3 minutes.
- Add olives and leave to warm for 3-4 minutes.
- Take out of the pan and into a serving bowl.
