It’s almost our Greek Easter time and I’m excited!!! We LOVE Easter in our family and of course it’s always a food celebration. These lamb skewers or baked vegetables are a Papou and yiayia special, and you just know they’re going down a TREAT! @australianlamb has got us covered this easter, and I’ve come to you with a REALLY easy few dishes that you can bring if you're on dish duty.
Baked vegetables, with a delicious grated tomato over the top to keep it from drying out and a delicious lamb skewer that you can make into small little bite ones or the big, main serve ones :)

Ingredients:
• 500g oats or rice puffs
• 125g coconut flakes
• 1–2 teaspoons ground cinnamon
• 60ml maple syrup
• 2 tsp vanilla essence
• 50g biscoff spread
Per serve
• 135ml reduced-fat milk (of your choice)
• 3 strawberries, halved
• 50g reduced-fat Greek yoghurt
• 80g biscoff muesli
Method:
1. Preheat the oven to 180°C (350°F) and line a baking tray with baking paper.
2. To a large bowl add oats and coconut flakes and mix well.
3. In a seperate bowl, add cinnamon, maple syrup, vanilla essence and biscoff spread and whisk until smooth and runny. Pour over the oat mixture and mix to combine well.
4. Transfer the oat mixture onto the baking tray and spread out evenly. Place in the oven to toast for about 20 minutes, tossing halfway. Keep a close eye on it to ensure it doesn’t burn.
5. Remove from the oven and set aside to cool. Once cooled completely, store in an airtight container for up to 4 weeks.
6. Serve with milk, strawberries and yoghurt

I know everytime I say "this is my favourite thing to air fry" I come up with something 5 minutes later to also air-fry....but this is NOW MY FAVE THING TO AIR FRY! Pavlova?! Are we seeeerious?! YUM! Typically you'd think that you can only make savoury things in the airfryer, but sweets work PERFECT! Muffins, cookies, pavlova even....SO GOOD! I made one big one, but you can make little baby ones too! 1 x whole chicken (size 20 fits in the airfryer perfectly)
2 spring onion stalks, sliced thinly
10 basil leaves, chopped finely
2 thyme sprigs, chopped finely
4 tbsp tomato paste
2 large garlic cloves, crushed
1 lime, juiced
1 tsp paprika
1/4 tsp cayenne pepper
Generous amount of salt and pepper
2 tbsp olive oil

They are SO easy to make, and par-boiling them makes for a really soft potato on the inside, but then adding them to the oven makes the outside crunch and it's just perfection.
If you don't want to use your oven, you could throw them in the air-fryer for that extra crisp (ok fine you don't HAVE to use an air-fryer but...I just am in love with mine... haha!). 20 minutes on 180 degrees would do the trick perfectly after they are par boiled.

2 salmon fillets – Skin off
2 garlic cloves – crushed
2cm fresh ginger – grated
1 fresh chilli – deseeded and finely chopped
2 Tbsp. Soy sauce
1 Tsp sesame seeds
1 fresh spring onion – finely sliced
1 Tbsp. Organic honey
½ a Lime – Juiced
1 Tbsp. Coriander – Optional
Directions:
1. Add garlic, ginger, chilli, soy sauce, spring onion, coriander lime juice and honey into a mixing bowl and mix thoroughly. Add salmon to bowl and coat thoroughly. Leave to marinate for 30 minutes to an hour.
2. Place the fish onto a lined baking dish and spread any leftover sauce on top.
3. Grill or broil for 15 minutes or until cooked to your liking.
4. Sprinkle sesame seeds on top and serve with a side of rice or salad!
