I'm guessing most of you could do without the question 'What's for dinner?' after a busy and long day. Myself included, I don't have the energy to slave in the kitchen for hours after a huge day. You want a nourishing and filling meal that takes minimal time, energy and - let's face it - cleaning up.
Even with my love food, I also crave quick meals that are easy to cook, which is why I wanted to share with you my five quickest dinner recipes.
This is the seafood version of my Light Creamy Chicken. Both are warming, super tasty and perfect with either pasta or rice. They are super hearty, while also being light....is that a thing...? It sure is!! The best part is...barley any clean up!

3. Vegan Dahl
This recipe is so tasty and packed with protein to keep you nice a full! It takes a little time to simmer but prep time is minimal. Once all the ingredients are on the heat, you can basically sit back and relax. Dont let the "vegan" title scare you, it SERIOUSLY packs a punch with flavour. It can be serves with delicious naan bread and some rice.
Who doesn't love one tray bakes? So easy and delicious! All the flavour from the veggies just oozes into the chicken and makes the dish taste amazing. Super quick, simple and barely any cleanup!
